Foodie Friday: Lemon Gnocchi With Peas And Spinach

Let’s get straight to the point, this is my favourite recipe. All of the flavours play off of each other perfectly, it is so easy to make, it’s creamy, delicious, AND it’s healthy. It really is the perfect recipe.


1 lb package of gnocchi

3 cups of spinach

1 cup of frozen peas

1/4 cup of grated Parmesan cheese

8 ounces of heavy cream (whipping cream)

1 clove of garlic smashed

1 1/2 teaspoons of fresh lemon juice

1 teaspoon of grated lemon zest

1 pinch of sea salt


In a large sauce pan, add heavy cream, garlic and salt. Cover and simmer for approximately 5 minutes. Add spinach and cook uncovered until leaves are wilted. Remove sauce pan from heat and add both lemon juice and zest.

Meanwhile in a large pot, bring water to a boil and add gnocchi. Cook approximately 5 minutes or until the gnocchi floats to the top. Drain water, but make sure to save 1/2 a cup of the water for later in the recipe.

Mix gnocchi and sauce in the sauce pan, adding small amounts of the reserved water until sauce is desired thickness.

Add lemon juice, lemon zest and Parmesan into the dish and serve while hot.
