Foodie Friday: Spicy Salsa & Tortellini Soup

The week is nearing its end and it’s been a long one, ladies and gents! I finally finished up midterm exams yesterday, so I’m freeeeee (for the next few weeks at least!)

Between exams and getting over a knee injury, I was in need of some quick and relatively easy meal ideas and my Mother makes this absolutely delicious tortellini soup that just so happens to fit into the “quick and easy meals” category!!

Another thing that fits into the category of convenience is this amazing Nulla Phone Case. I simply stick it to my kitchen’s backsplash to either watch Netflix episodes while I cook or to easily read the recipe right from my phone. I have had this case for a couple of months now and it still works as great as it did when I first bought it!

PS: drinking wine helps a lot too with this recipe 😉


-1 can of spicy salsa

-1 can of crushed tomatoes

-2 boxes of beef broth

-1 package of California mixed vegetables (cauliflower, broccoli & carrots)

-1 package of cheese tortellini

-1 package of beef tortellini

-1/2 cup of Parmesan cheese


-cook frozen vegetables, follow directions on back of package

-cool tortellini, boil for 5 minutes and drain

-add all of ingredients (except Parmesan cheese) into soup pot and bring to a boil.

-cook on low for 10 minutes, sprinkle with Parmesan cheese and ENJOY!

I told you it was easy peasy. This must be why y’all keep me around…for my “lazy gal” recipes!!

If you are hoping for a spicier soup, try adding Frank’s Red Hot Sauce. AND if you happen to make it too spicy, add a spritz of lemon juice to the soup.
