Asparagus is one of my favourite vegetables to ring in the Spring season with (even if it is still currently snowing outside). It is such a versatile vegetable packed with flavour, Vitamin B, Vitamin K and folate and is low in sodium and calories. So keep reading for this delicious and health conscious meal!
-1/2 bunch of asparagus–1 lemon
-1/3 cup of parmesan
-3 tablespoons of olive oil
-2 cloves of garlic
-dash of pepper
-2 cups of uncooked penne pasta noodles
-preheat oven to 425 degrees and cook pasta in separate pot
-lay down tin foil on top of pan
-cover pan with olive oil and place asparagus on top
-sprinkle asparagus with the remaining ingredients
-bake asparagus for 10 minutes
-add pasta and asparagus together in serving bowl
-add more of the seasoning ingredients (mostly olive oil and lemon juice) to pasta
-sprinkle lemon zest on top and serve!
